Roasted Red Pepper Dressing

This tangy dressing can really perk up a meal.  Use as a salad dressing, dipping sauce or just drizzle on a burger!

The ingredients:

  

  • 1/2 cup + 2 tbsp. extra virgin oil oil 
  • 1/4 cup Apple cider vinegar
  • 1 tsp. crushed garlic
  • 2-3 basil leaves
  • 2 red peppers
  • Salt and pepper

First, let’s roast those peppers! Keeping whole, completely coat the peppers in olive oil (about 1 tbsp each).  Place the peppers on a cookie sheet and broil.  As each side begins to darken, turn the peppers to cook each side.  Once each side is marked and the peppers are soft, remove and place in medium bowl.  Cover immediately with plastic wrap.  Let the peppers steam, then cool.

  
Once cooled, gently peel the skin and discard the seeds and stem.

  
Place the peppers, vinegar, basil and garlic into your food processor. After you begin processing, gently add the oil slowly. Continue processing until your dressing has emulsified and has a creamy texture.
