Confetti Cabbage

The cabbage I made last night got rave reviews so I decided to share, the secret (not shown in photo) was coconut aminos, a substitute for soy sauce that is completely Whole 30 compliant!

The ingredients:

  

  • 1/2 Napa cabbage head
  • 1 leek, washed and trimmed
  • 3 sweet peppers
  • 1/2 green pepper
  • 1 clove garlic
  • 2 carrots
  • 5 mushrooms
  • Seasonings: salt, pepper, red pepper flakes
  • Coconut aminos or soy sauce
  • Olive oil

Do your prep work.  I chopped the leeks and sliced the other veggies.

  
Add 1 tablespoon of olive oil to a large skillet and set your burner to high.  Add veggies and sautée for two minutes.  Turn heat down to medium.  Add salt and pepper and red pepper flakes to your taste preferences.  Add 2 tablespoons of coconut aminos.  Give it a stir and then cover, let that cook another 8 minutes.

  
Serve and enjoy!  This recipe yields roughly 4 servings.
