Chicken Salad Wraps

As I share my first recipe here I feel the need to say…. I cook real food for real people.  There are no fancy knife cuts, glamorous camera shots or strict measurements.  I cook with love and determination, not pretty utensils and fancy dishes and crocks (although I would love to have some!)  With that said, let’s dive into my favorite lunch, Chicken Salad Wraps.

The ingredients: 

  

  • 1 chicken breast, roasted
  • 1/3 cup sliced almonds
  • 1 avocado
  • 1 stalk of celery
  • 1 carrot
  • 2-3 small sweet peppers
  • 1/2 of lime
  • Choice of seasoning.  I love the Everyday Seasoning from Trader Joe’s.  I put it on everything.
  • Pinch of sea salt
  • 5 romaine lettuce leaves

Do your prep.  Peel, chop, slice and dice those veggies….. But keep the romaine leaves to the side!

  
Cut your avocado, spoon that goodness out and gently mash in medium size mixing bowl.

  
Add your veggies.

   
Then your almonds.

   

And finally your cut up chicken breast.  At this point I squeeze the juice of the 1/2 lime, pinch of salt and other seasoning I am using to the mixture.

  
Give it a good mix and then set it aside.

  
Now take your lettuce leaves, make sure they are clean and patted dry.

 
Gently spoon the chicken salad into the lettuce cups.

  

Add your favorite fruit and enjoy your lunch!

  

I typically do 2-3 wraps for lunch.  If you reserve your avocado pit and add it to the chicken salad, it will remain fresh for 1 day.  Make sure to keep it in an airtight container!
