Day One

Have you heard of Whole 30?  Back in January of this year I completed my first round of the elimination eating plan and just fell in love with how my body felt, looked and performed by simply changing what I ate.  If you are not familier with this eating plan pick up a copy of It Starts With Food By Dallas and Melissa Hartwig.  This book completely outlines and explains why this approach with food can work for most people.  Basically you are eliminating soy, all legumes including peanuts, dairy, alcohol, grains and sugar.  There are a few other items to avoid, but I will let you discover them when you read the book!

So, today is my first day back on Whole 30 after taking a 3 month break.  In January I lost 15 pounds and inches everywhere.  I dropped a size in my clothing and felt great!  Three months later I have gained 10 pounds back and I am busting out of my new size, about to return to my former clothes.  This is out of control!  My hope is to publish my journey by using my iPhone to capture each meal and hold myself accountable while sharing recipes, food finds and results.  Here we go…..

Breakfast 5.4.15.  One egg cooked in ghee, handful of spinach and sweet potato cubes, iced Americano with homemade cashew milk.

Lunch 5.4.15.  Homemade vegetable and chicken soup (recipe to come soon) 1/2 avocado, plantain chips and a lacroix sparkling water.

Dinner 5.4.15. Meatloaf, roasted zucchini and tomatoes, roasted carrots and skillet potatoes with onions, unsweetened iced tea.



Wondering what was in my meatloaf? The secret is zucchini!  Since there are no breadcrumbs on Whole 30 I needed something to help bind the meatloaf.  Try adding 1/2 of a zucchini grated and drained to your own recipe, you will love the moist results!
